Cooling Vegan Feta & Watermelon Salad Recipe

A hydrating, vegan summer salad that will leave you feeling light and refreshed.


This cool, summer salad is perfect for effortlessly impressing garden party guests or simply munching on in the midst of a hot day. It only takes a few minutes to make and is satisfying with just the right blend of saltiness, sweetness, and crunch.


The watermelon in this recipe is ultra-hydrating and great for your skin, while mint helps cool you down, improves digestion, and gives you a few antioxidants along with Vitamin A and Vitamin C.

RECIPE


Total meal prep time: 10 minutes maximum

Makes 3-4 servings

Ingredients:


•1/2 of a seedless, organic watermelon

•1/4 c. of vegan feta (or use regular feta, if you like)

•Leaves from 2-3 stalks of fresh mint, sliced with scissors into thin ribbons

•Salt & pepper to taste


Steps:

  1. Cut half watermelon into 1-1.5” cubes and place in a large mixing bowl.

  2. Clean mint leaves and use cooking scissors to cut them into thin ribbons over the watermelon.

  3. Sprinkle vegan feta on salad.

  4. Gently fold feta into salad and add salt and pepper to taste.

  5. Serve immediately.

  6. Optional: Garnish with full mint leaves.
